Smashed Chickpea Salad Wrap

  1. In a bowl, mash chickpeas with a fork until slightly chunky.
  2. Add diced cucumbers, cherry tomatoes, red onions, parsley, lemon juice, and olive oil.
  3. Season with salt and pepper.
  4. Spread a layer of hummus on an Early Bird Bakery wholemeal flatbread.
  5. Add the smashed chickpea salad and roll up the flatbread.
