Vegetarian Lunch Pita Pocket

Can be made in 2 ways:

Quinoa and Roasted Veggie

  1. Toss cooked quinoa with roasted vegetables like sweet potatoes, bell peppers, and broccoli.
  2. Then stuff it into an Early Bird Bakery pita pocket.

Greek salad

  1. Prepare cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, and Greek dressing.
  2. Then stuff it into an Early Bird Bakery pita pocket.
